Ingredients for two...
2 slices thick hickory smoked bacon (or other OK also...)
2 chicken apple sausage
2 think slices of tri tip
bunch asparagus
1 avocado
1 tomato
1 green onions
garlic butter
lime / lemon / olive oil
With all the talk of tri tip since I have been on the West Coast, I thought and finally came up with my own device... Pre cook the sausages about 80%, the bacon also making sure it stays soft, same with the tri tip slices. With some dexterity, wrap the tri tip around the sausage in a diagonal form trying to cover as much of it as possible, same with the bacon and insert a couple toothpicks to hold it all together. Please do not forget to take the toothpicks out when done... they can hurt!
In the same pan... after peeling the asparagus, grill them to your liking, adding the sliced green onions. Cut up the avocado and tomato. Plate the tri tip/sausage/bacon which you sliced diagonally, in the center. Surround with avocados, tomatoes and asparagus as in the picture...
Squeeze a bit of lemon and lime juice to your liking, drizzle some olive oil. Enjoy!
