Blue corn is prized for its vibrant blue color as well as its sweet, nutty flavor and hearty fine texture. Blue corn is still cultivated by Native Americans of the Southwest and represents the Eastern rising sun and the beginning of life, wisdom and understanding. The cookies are similiar in texture to a shortbread cookies. To compliment this flavor, we have coupled this mix with Cactus Marmalade, which adds its own sweet, yet tart flavor of prickly pear and lemon. This is a great recipe to make with the kids!
