I'll probably use them as a side dish for lunches and also some beef and chili burros.

We just roasted a big sack like that last week. We divided them up into freezer bags, freeze 'em and use them all winter.
Don't wait too long to roast them. It took us several days to get around to it and some were beginning to rot..
Green chiles on hamburgers, in scrambled eggs, in salsa, in guacomole, tortilla soup, green chile stew, chile rellenos...the list is endless.

I roasted half of them right away....The rest will have to wait until tomorrow.
They are sure good tasting! I like the medium hot....just a slight burn. I eat them as a snack sometimes...ala carte! One of my crew members is a young Mexican woman who is always cooking traditional dishes and feeding us, so of course the chilis are an excellent suppliment. Today was fajitas for lunch.

I love peppers too! And I think the Chili pepper capitol of the World is Hatch, NM. Here's one right after their harvest time in Hatch. We've gotten a lot of aristras of peppers over there.

You guys are killing me with the pics, and I'm, itching for some good NM type cooking/food...........and I'm stuck in Vegas with a budget that will only get me as far as Hoover Dam!!!
I guess my only recourse against the assult on my yens are that your chilis and peppers are extremely hot and you pay the price on the 1st bite !!!
