Wrapped Sausage & Asparagus by Chef Ara

Desert Lil's Delicacies - A DesertUSA Food Feature

by Chef Ara

food

Ingredients for two...

2 slices thick hickory smoked bacon (or other OK also...)
2 chicken apple sausage
2 think slices of tri tip
bunch asparagus
1 avocado
1 tomato
1 green onions
garlic butter
lime / lemon / olive oil

With all the talk of tri tip since I have been on the West Coast, I thought and finally came up with my own device... Pre cook the sausages about 80%, the bacon also making sure it stays soft, same with the tri tip slices. With some dexterity, wrap the tri tip around the sausage in a diagonal form trying to cover as much of it as possible, same with the bacon and insert a couple toothpicks to hold it all together. Please do not forget to take the toothpicks out when done... they can hurt!food

In the same pan... after peeling the asparagus, grill them to your liking, adding the sliced green onions. Cut up the avocado and tomato. Plate the tri tip/sausage/bacon which you sliced diagonally, in the center. Surround with avocados, tomatoes and asparagus as in the picture...

Squeeze a bit of lemon and lime juice to your liking, drizzle some olive oil. Enjoy!

Be well... Ara & Spirit

About Chef Ara

Allow me to introduce myself: my name is Ara Gureghian. Since childhood, my passion for Artistic Culinary Creations has given me the character of my personality and the ability to flow through life with a sense of good fortune, able to exert my passion into a profession, preparing and offering food that leaves a lasting memory.
After finishing my education in France, where I was born, and my Culinary Schooling at the "Institut International de Glion Sur Montreux", in Switzerland, I ended up being self-employed most of the following years, owning various restaurants and a bakery.

The routine, the every day menu, the 24/7 and the reliance on others with its obstacles led me to the present. I was able to successfully offer my culinary experience to clients in their own surroundings with their choice of both menu and time.
